Homemade Apple Butter
Well, here is my first attempt at making Apple Butter. When all was said and done, I wound up with about 3 quarts this morning. My kids absolutely loved it and just went wild with it on their pancakes. Not to sound boastful, I'll have to admit, it WAS good! That being said, I don't feel that I can entirely take all the credit for it's success. I really believe the secret lies in the apples that we purchased this Fall at a nearby Apple Orchard. If I could make one suggestion, that would be it. Use fresh apples from a local Orchard or Farmer's Market. Those of you that have your own Apple Trees are already set! Would you like to try & make your own Apple Butter? It was quite easy... here's how:
Ingredients:
88 ounces apples, peeled and sliced
4 c. sugar
2-3 t. ground cinnamon
1/4 t. salt
Method:
- Place apples in a large bowl. Combine sugar, cinnamon, cloves & salt.
- Pour over apples and mix well.
- Place in crockpot, cover and cook on high for 1 hour.
- Decrease heat to low; cover and cook on low for 9-11 hours or until thickened and dark brown. Stir occasionally.
- Uncover and keep temperature at low, cooking for 1 hour longer.
- If desired, whisk until smooth. (I used my food processor to do this).
- Spoon into freezer containers, leaving 1/2-inch headspace.
- Cover & freeze.

Berry-Apricot-Vanilla Parfaits
Ingredients:
1 cup fresh raspberries, blueberries, or blackberries
1/4 cup apricot preserves
1 pint Purely Decadent Dairy Free Purely Vanilla ice cream
Directions:
Combine berries and preserves in a small pot and cook over medium heat, stirring occasionally for about five minutes, until berries are softened. Remove from heat, cover, and refrigerate until ready to use.
To serve, layer each of 4 parfait glasses with ice cream and sauce. Garnish with fresh berries and a dollop of Hip Whip or Soyatoo whipped topping, if desired.
